°225 g (1 1/2 c) all-purpose flour
°5 ml (1 tea c) baking powder
°5 ml (1 tea c) baking soda
°310 ml (1 1/4 c) ripe bananas, mash with a fork (3 to 4 bananas)
°125 ml (1/2 c) coconut milk
°15 ml (1 tsp.) lime juice
°115 g (1/2 c) unsalted butter, soft
°210g (1 c) sugar
°5 ml (1 tea c) vanilla extract
Place grill at the center of the oven. Preheat oven to 180°C (350°F). Butter 23 x 13 cm (9 x 5 in) loaf pan with a capacity of 1.5 liters (6 cups) and line it with a strip of parchment paper, pushing it back on both sides.

In another bowl, mix the bananas, coconut milk and lime juice.
In a third bowl, cream the butter with the sugar using an electric mixer. Add egg and vanilla. Mixing to preparation is homogeneous. On low speed, incorporating the dry ingredients alternately with the banana mixture. Spread the batter into the mold.
Bake for 1 hour or until a toothpick inserted in the center of the bread comes out clean.
Let cool on a wire rack. Unmould. On a work surface, cut into slices.
